Typical Dishes:

  • Salad of chonta or palmito (stem of the Palm also called pona).
  • Ceviche de Dorado: Fish based.
  • Inchicapi: soup of chicken with peanuts, cilantro, and cassava)
  • Timbuche: concentrated broth made from fish and cilantro.
  • Cecina: beef or pork meat dried and salted.
  • Patarashca: fish wrapped in banana leaves and roasted on the fire.
  • Juanes: mass of rice to stick with pieces of chicken, wrapped in banana leaves and steamed.
  • Tacacho: prepared with roasted green banana, mashed and kneaded with fried pork rinds. Usually, combined with jerky.
  • Inchicucho: prepared based on corn, peanuts and chili. There are a variety of tropical fruits such as aguaje (Palm tree whose fruit is a purple and orange pulp), taperiba (better known in the coast as "mango-ciruelo"), bananas, papaya, cocona, camu-camu, passion fruit and guava.

Traditional Drinks:

  • Masato: Drink boiled and pounded cassava, fermented with molasses or sugar.
  • Aguajina: soft drink made from the fruit of the aguaje (Palm tree).
  • Chapo: specially prepared with banana mature. (Capirona).
  • Shibe: prepared based on manioc flavor (fermented and roasted cassava).

Short drinks:

  • Huitochado: prepared with fruit "huito", sugar and brandy.
  • Chuchuhuasi: prepared based on the bark of the same name, marinated in brandy.
  • Siete Raíces: prepared with different crusts as cumaceba, clavohuasca, marure, huacapurana, huchuhuasi, cocobolo, ipururo, sweetened with honey and marinated in brandy.
  • Coconachado: prepared based on the "cocona" fruit sugar and brandy.
  • Huarapo: fermented sugarcane juice.
  • Piraña bite: prepared based on rum and cocona.
